The Gaggia Classic Evo Pro is the latest iteration of one of the most modded espresso machines on the market. The selling point is the same as it has been for two decades: a 58mm commercial portafilter, a brass group head, and a chassis designed to be opened and serviced indefinitely.

Out of the box, the Evo Pro is a competent but unexceptional machine — single boiler, no PID, 9-bar pressure. The strategic value is what owners do to it.
